Bikini Recipe
Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Syrup: Place all the components in a pan, heat until it reaches a simmer, stirring so the sugar melts. Then, remove from the heat and leave to cool completely. Pour to a sterilised bottle, cap it and refrigerate it chilled, it can be stored for about one month.
To make Premix: Mix all the spirits and syrup in a sizeable container, let it rest for an hour, then filter it preferably using muslin, to ensure it's perfectly clear.
When ready to serve: Pour 85ml of your cocktail base to a cocktail shaker packed with ice, and stir gently for one minute to chill. Filter into an chilled martini glass or equivalent, top with the cranberries and complete it with a brief mist of the essential oil above the glass.
